Also if this helps, I notice if I open the image in PS it will save as a JPG. Once I do any editing/cropping to it, it makes it a PSD, so I wonder if it's something I accidentally changed in PS?

Here is a similar thread http://forums.adobe.com/thread/1292384?tstart=30 OP has not been able to reset preferences. Instead of reset window they get scratch disk window. Have you tried and susceeded?

If you use the Crop Tool and "Delete Cropped Pixels" is unchecked in the Options bar at the top, then it will save as a PSD. You must check that option if you want to save it as a jpeg. Gene
